Chocolate Dipped Cookie Ice Cream Sandwiches

Bite into these tasty ice cream sandwiches made with our Old Fashioned Vanilla nestled between two chocolate chip cookies and dipped in a nutty chocolate coating.

- ½ cup butter, melted
- 6 tbsp granulated sugar
- ½ cup + 2 tbsp light brown sugar, firmly packed
- 1 ½ cups flour
- ½ tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 1 egg, room temperature
- 1 egg yolk, room temperature
- 1 tsp vanilla extract
- 1 ¾ cups chocolate chips
- 1 Sqround (48 oz.) Alden’s Organic Old Fashioned Vanilla
- ½ cup chopped nuts
- 3 tsp coconut oil
Instructions
- Preheat the oven to 350°F.
- Line two 8×8 inch baking pans with parchment paper, then set aside
- In a medium, microwave-safe bowl, melt the butter in 30-second increments.
- While the butter slightly cools, combine flour, baking soda, baking powder, and salt in a medium bowl. Whisk to combine.
- Combine granulated sugar and brown sugar with the melted butter, then whisk in the egg, egg yolk, and vanilla.
- Combine the wet ingredients with the dry ingredients and mix with a spatula until combined. Fold in ¾ cup of the chocolate chips.
- Cut the dough in half and spread each half evenly in the two 8×8 inch baking pans, then bake for 15-18 minutes or until slightly golden on top.
- While cookies are baking, remove Alden’s Organic Old Fashioned Vanilla from freezer to soften for about 20 minutes.
- Allow the cookies to cool to room temperature before cutting into 2×2 inch squares.
- Spread a layer of softened ice cream into a clean 8×8 baking pan. Place back in the freezer until refrozen, at least 2 hours.
- Melt the remaining chocolate chips and coconut oil until thin and smooth,, then stir-in the chopped nuts.
- Cut the ice cream into 2×2 inch squares and place between two cookies. Dip the ice cream sandwich into the chocolate-nut mixture then allow to harden for 5 minutes.
- Enjoy immediately or store in the freezer until you are ready to eat!
